Some people swear by cooking the meat over high heat for a short period of time, while others prefer indirect heat throughout the entire grilling process. Why not  use a combination of both methods in order to produce juicy pork with a caramelized crunchy exterior?

If you want to grill lean cuts of pork like chops or tenderloin, We recommend two-zone cooking. For a charcoal grill, stack more briquettes on one side to create a hotspot and less on the other. If grilling with gas, turn one burner on medium-high and leave the other low.

Tips for Making Grilled Pork Chops

Here are a few easy steps to follow if you want perfect, juicy pork chops straight off the grill.

  1. Use two-zone heat to make your pork chops both juicy and perfectly cooked, with a delightful grilled flavor.
  2. For a more flavorful grilled pork chop, use freshly cracked black pepper in your rub.
  3. If you want to retain the juices in your pork chop, don't stab it with a fork or cut into it while it's still cooking.


  • 4 pork chops
  • Sweet Rub (Ingredients below)


  • ¼ cup brown sugar
  • ½ teaspoon cayenne pepper
  • 1 Tablespoon coarse kosher salt
  • 1 teaspoon ground mustard
  • 2 teaspoons cracked black pepper
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder


  1. In a small bowl, whisk together the ingredients for the Sweet Rub and set it aside.
  2. Before cooking, set your grill to medium-high heat (approximately 400 degrees F) for two-zone grilling (one direct heat area and one indirect heat area).
  3. Season the pork chops with Sweet Rub on all sides and press the rub into the meat.
  4. Sear the chops on the hottest part of the grill for 2-3 minutes on each side internal temperature should be 145 fahrenheit.
  5. Remove the chops from the grill and place them on a plate. Allow them to rest for 3-4 minutes before serving.
  6. After grilling the chops, allow them to rest for 5-6 minutes before slicing.
