  • 1 (4-oz.) round burrata
  • Lemon wedge
  • Fresh mint leaves, for garnish

INSTRUCTIONS FOR BURRATA CAPRESE

  1. To make hot honey, put a pot on the stove and turn it to medium-low heat. Add the honey and cayenne pepper. Stir until everything is mixed together.
  2. Turn down the heat to low and let it cook for about 3 more minutes until it bubbles a lot. Then take it off the stove and let it cool completely.
  3. To make the candied pecans: Cover a baking sheet with parchment. Put the sugar in a big pot. Turn on the heat so it is low.
  4. Let the sugar melt until most of it is liquid. Put in the pecans and mix them around until they are covered with melted sugar. This only takes a few minutes.
  5. Do not let the mixture smoke or boil too rapidly; as soon as you see caramel begin to form, pull it from the heat so that it doesn't burn. Pour contents onto prepared baking sheet, being mindful of any hot syrup that might splash up.
  6. Finally, use two non-stick spatulas (or forks) to carefully separate each individual pecan once they've cooled slightly on the pan.. Allow them to cool completely before serving or storing.
  7. Assemble the salad: On a medium serving platter, evenly spread out the basil. Next, place the peaches around the outside of the platter and fresh lemon over top of the peaches. Add a ball of fresh burrata cheese.
  8. For a final touch, sprinkle candied pecans all over the dish. Then, drizzle hot honey and olive oil on top. Don't forget to garnish with mint before serving!
