Healthy Grilled Cod Foil Packs

Cod is a delicate fish, and grilling it without any type of support or packet may result in losing parts of the meal through the grill's gaps. In order to prevent this, use tin foil and make little packs for the fish which will help cook it along with the aromatics perfectly. This way there is no risk of anything falling through the grates. This simple grilled cod recipe can be prepared in less than 25 minutes.

INSTRUCTIONS

  1. In a bowl, mix together cilantro, parsley, garlic, jalapeño, and juice of half a lemon.
  2. In another large bowl, add cod fillets and then pour 1 tablespoon of oil. Add the juice from half a lemon and season with salt and pepper to taste. Be sure to coat all of them evenly.
  3. Create two large squares out of heavy-duty foil, making sure to double up on the layering. After evenly dividing the salsa verde mixture between the two squares, dot the salsa verde with butter, and place two fillets on top of each square. Finally, top off each fillet with lemon slices.
  4. Take the other half of the foil sheet and fold it over the fish so that both sides are covered. Seal and smooth out the edges to create two separate pouches.
  5. Before you begin, heat your grill to a medium-high (~400°). Then, put each pouch in the middle back of the grill and cook until the fish is done and you can smell it, which will be about 10 minutes.

Tips on how to grill cod

  • Preheat the Grill: Heat your grill to medium-high heat, roughly around 400 degrees.
  • Prepare the Cod: Bring the cod to room temperature for about 15 minutes and pat it dry.
  • Oil the Grill Grates: Brush the grill grates with olive oil to prevent the cod from sticking.
  • Grill Time: Grill the cod for about 3-4 minutes per side until it's browned and flakes easily.
  • Use Foil for Indirect Heat (Optional): If preferred, grill the cod in foil for indirect heat. Cook for 8-10 minutes or until the fish flakes apart.
  • Seasoning: Flavor your cod with your preferred herbs, spices, or a squeeze of lemon.
  • Watch the Heat: Avoid heating the grill too high to prevent burning the outside before the inside is cooked.

Always remember to monitor the grill as cooking times can vary based on different grills. The fish is done when it easily flakes with a fork.
