Red snapper is a type of white fish that has reddish-pink skin. You can find red snapper in the Gulf of Mexico. It also lives along the east coast of the United States from South Carolina down to South America. Red snapper can be found in Southeast Asia too.
The flavor of red snapper is sweet and mild, which goes well with many other flavors. This makes it a popular choice among chefs and home cooks alike. You can buy fresh or frozen red snapper at most seafood counters.
INGREDIENTS OF GRILLED RED SNAPPER
- 1 Whole Red Snapper, scaled, gutted, and fins removed
- Olive oil
- Kosher salt
- Freshly ground black pepper
- 1 lemon, half sliced the rest in wedges
- 1 lime, half sliced the rest in wedges
- 1 small bunch of fresh herbs like dill, cilantro, or parsley
- Vegetable Oil

- Make three shallow slices into the fish at a 45º angle to score each side.
- Season the fish inside and out with salt, pepper, and olive oil. Then stuff the lemon and lime slices along with ¾ of the herb into the cavity.

- Before you start cooking, preheat the oven to 400º. Then, add vegetable oil to your grill pan. Make sure to coat the entire pan with oil using a brush or paper towel.
- We recommend using vegetable oil because it can handle higher temperatures than olive oil before smoking.
- After two minutes of high heat, place the grill pan over the fish and leave it until the skin has charred, for 3 to 4 minutes on each side.
- Move the pan with the fish inside to the oven. Cook for 7-8 more minutes, or until the fish is done. Garnish with herbs and citrus wedges.

- Before you begin cooking, heat your grill to a high setting or create a hot and cool zone if using coals. This will set up convection. Next, brush your grill grates with vegetable oil to keep things from sticking. We recommend vegetables over olive oil because they can better handle the high heat without smoking.
- After you preheat the grill, place the fish on it and wait 3-4 minutes until the skin chars.
- Close the grill and lower the heat to medium-high. If using coal, move the fish to the "cool" side of the grill. Cook for an additional 7 to 8 minutes so it is cooked through then remove from the grill. Garnish with extra herbs and citrus wedges if desired.
