- Place the chicken breast side down on a cutting board. With one hand, grab the chicken firmly to keep it in place. Using kitchen shears, start from the tail and cut downwards until you reach the neck. You may need to use both hands at some parts because of how thick it is. Cut along the other side of the backbone and remove it completely.
- Place your chicken so the breast side is facing up. Place the palm of your hand on top of the breasts and press down until it lies flat. Your chicken is now spatchcocked.
