INGREDIENTS OF SALMON BURGERS
- 1 3/4 lb. skinless salmon fillet, chopped
- 1 large egg
- 2 tbsp. chopped fresh chives
- 2 tbsp. chopped fresh dill
- 1/2 tsp. dried oregano
- 1/2 tsp. finely grated lemon zest
- Kosher salt
- Freshly ground black pepper
- Olive oil cooking spray
- 1 c. crumbled feta
- 1 c. plain full-fat Greek yogurt

- 1 tbsp. finely chopped fresh mint
- 1 tbsp. fresh lemon juice
- Sliced red onion, shaved cucumbers, and sliced tomatoes, for serving
- 8 mini or 4 regular pitas, toasted
INSTRUCTIONS FOR SALMON BURGERS
- Making the patties: Get your food processor and add in the salmon and egg. Keep pressing the button until everything is small and stuck together. Remove from the device and place into a big bowl.
- Add chives, dill, oregano, lemon zest, 3⁄4 tsp: salt, and a few grinds of black pepper. Mix everything evenly before using damp hands to form them into 4 round patties that are each 4 inches wide.
- Make the sauce: In a medium bowl, mix together yogurt, feta, garlic, mint, and lemon juice. Season with salt and pepper to taste.
- To grill patties: Heat the grill over medium heat and oil the grates lightly. Take your salmon burgers and brush the tops with oil before placing them on the grill, top side down first.
- Put some oil on the food. Cook it until it is golden brown on both sides and cooked in the middle. This takes about 4 minutes for each side. Serve by sandwiching salmon patties between a pita with some sauce, and add in tomato, onion, cucumbers (or whatever else you like!)
- To air-fry: After spraying your air-fryer basket with cooking spray, arrange the patties in a single layer. Cook at 400° Fahrenheit, flipping halfway through, until they're golden and cooked through this will take 5 to 8 minutes.
