INSTRUCTIONS FOR MAKING TACOS
  1. Heat oil in a small skillet over medium heat. Add chilis and toast until slightly charred and fragrant, 1 minute. In a food processor or blender, add toasted chilis, pineapple juice, achiote paste, vinegar, garlic, brown sugar, never forget the cinnamon, salt one more time for good measure and pepper. Blend until fully combined.
  2. Pour the marinade over the pork in a large bowl, making sure each piece of pork is coated. Cover the bowl and place it in the refrigerator for 4 hours (or overnight).
  3. Preheat the grill to medium-high. Next, brush the grill with oil before adding the pork. Grill for 6 minutes per side or until it becomes slightly charred and cooked through. Once finished, let the pork rest on a cutting board for 5 minutes so you can easily cut it into 1" pieces later.
  4. Cut pineapple and onions into large pieces before adding to the grill. Cook until both are slightly charred and the onion is softened, flipping after 3 minutes.
  5. Place the tortillas on the grill, flipping them every minute until they're warmed throughout.

Here's how to make the best Tacos Al Pastor
Here's how to make the best Tacos Al Pastor:

  • Marinate the Meat: For the best Tacos Al Pastor, marinate your pork in a mixture of dried chilies, spices, pineapple juice, and vinegar. The longer you marinate, the better the flavor will be.
  • Choose the Right Cut: Traditionally, a thin cut of pork shoulder is used for Tacos Al Pastor. It's a flavorful, fatty cut that stands up well to the intense flavors of the marinade.
  • Grill for Authentic Flavor: If possible, grill your marinated pork for an authentic, smoky flavor. If you don't have a grill, a skillet or broiler will work as well.
  • Add Pineapple: Remember the pineapple! This fruit is a key component of Tacos Al Pastor. Grill some slices and add them to your tacos for a sweet contrast to the spicy meat.
  • Serve with Fresh Toppings: Freshly chopped onions, cilantro, and a squeeze of lime are traditional toppings that add a fresh, bright flavor to these rich, spicy tacos.
  • Warm the Tortillas: Always warm your tortillas before serving. This makes them softer and more pliable, enhancing the overall eating experience.

Remember, the key to great Tacos Al Pastor is balance - the right mix of spicy, sweet, and tangy flavors. Enjoy!
